No-Bake Energy Balls

Ingredients

  • 1 cup rolled oats
  • ¾ cup creamy peanut butter or almond butter
  • ½ cup almond flour or ground flaxseed (I used ground flaxseed)
  • 2 tablespoons maple syrup or honey
  • ½ cup mix-ins (chocolate chips used here)
    • Optional swaps: raisins, craisins, or other dried fruit
  • ½ teaspoon kosher salt

Instructions

  1. Add all ingredients to a large mixing bowl.
  2. Stir until combined. Toward the end, you may need to use your hands to fully mix everything together.
  3. Scoop and roll the mixture into balls.
  4. Place energy balls on parchment paper.
  5. Store sealed in the refrigerator.
